🇺🇸🇬🇧 I first tasted this white gazpacho (ago blanco) at a friend's place. He had found in one of the Moro cookbooks. I have made it several times since. I even turned it gluten-free once by replacing the bread with boiled potato, and the gazpacho's structure was still very much okay. (From Serious Eats.)

🇺🇸🇬🇧 This creamy roasted cauliflower soup is one of my favorites. I never was a big fan of cauliflower before I turned WFPB, but whole-foods cooking has shown me how versatile this veg actually is. (From Forks Over Knives.)

‼️ 🇺🇸🇬🇧 A staple in the WFPB-cuisine is veg stock. I always use carrots, celery, leek, onion, and garlic. And sometimes other vegetables that somehow did not get used and don't look too happy anymore. The fellas from The Happy Pear explain very well how it's done!

🇺🇸🇬🇧 Warm yoghurt soup with rice and mint! That's yayla çorbası. And this is a vegan recipe for this beautiful recipe from the Turkish cuisine! (From Kathi's Vegan World.)
