I first tasted this WHITE GAZPACHO (AJO BLANCO) at a friend's place. He had found in one of the Moro cookbooks. I have made it several times since. I even turned it gluten-free once by replacing the bread with boiled potato, and the gazpacho's structure was still very much okay. (From Serious Eats.)
