🇺🇸🇬🇧 I first tasted this white gazpacho (ago blanco) at a friend's place. He had found in one of the Moro cookbooks. I have made it several times since. I even turned it gluten-free once by replacing the bread with boiled potato, and the gazpacho's structure was still very much okay. (From Serious Eats.)

‼️ 🇺🇸🇬🇧 A staple in the WFPB-cuisine is veg stock. I always use carrots, celery, leek, onion, and garlic. And sometimes other vegetables that somehow did not get used and don't look too happy anymore. The fellas from The Happy Pear explain very well how it's done!
